Baked Quince
2 large quinces
3-4 cups water
1 knob butter
2 cups sugar
1. Wipe the quince over with a damp cloth to remove fur. Core & quarter & place into a heavy casserole dish with water & butter. Sprinkle sugar on evenly.
2. Place into oven at 200F or 100ºc overnight, or for approximately 6 – 8 hours. They should be a beautiful deep red colour and the syrup reduced.
3. Serve alone , or combine with poached pears and top with custard.
