Mango and Cherry Salad with Spiced Maple Syrup

Ingredients

2 large mangoes, peeled, seeded and sliced
400g cherries, stalks removed
Almond bread, to serve

Spiced Maple Syrup

½ cup maple syrup
20ml Dom Benedictine
1 cinnamon stick
4 cloves
Peel of ½ orange
1 tbsp lemon juice
2 tbsp caster sugar

 

Method

For syrup, combine all ingredients and ¼ cup water in a saucepan and simmer over low heat until sugar dissolves.

Pour syrup over combined mango and cherries and cool to room temperature then refrigerate, stirring occasionally, for 1-2 hours. Serve with almond bread.
