Cauliflower cheese with breadcrumbs and parmesan

A classic cauliflower cheese recipe, turned up a notch

Parmesan is just a starting point for this dish. If you’re a cheese-person, try making it with parmesan AND tallegio. Heaven!

Ingredients

1 cauliflower, broken into florets

2 cups fresh breadcrumbs

1 cup grated Parmesan

1 teaspoon lemon rind

75g butter, melted 50g

Taleggio broken up into small bites (optional)

salt flakes, ground black pepper

Method

  • Preheat oven to 180°.
  • Steam, blanch or microwave cauliflower pieces until just tender.
  • Place cauliflower pieces in an ovenproof dish, large enough so that the pieces fit snuggly in a flat row.
  • Combine breadcrumbs, cheese, lemon rind, seasoning and melted butter and then spread the mixture over the top of the cauliflower. If using Taleggio, sprinkle pieces evenly on top of the breadcrumb mixture.
  • Bake for 20 minutes or until the breadcrumbs are golden
  • (The Taleggio will add a rich, tangy flavour to the dish)
